Tasty Ranch Dip

 

We had a simple dinner last night. I was completely blown away by the ranch dip my wife and son made. Believe it or not, the recipe came from the Disney Family Fun magazine. It was a perfect compliment to the raw veggies – it was so good that the shrimp was one of the last things on my plate (usual). I went for seconds on the veggies. Summer is here!

 

RANCH DIP:

  • 1 16-ounce container sour cream
  • 1 tablespoon white vinegar
  • 2 tablespoons minced, fresh parsley
  • 2 tablespoons minced, fresh dill
  • 1/2 teaspoon garlic powder (or 1 clove garlic, crushed)
  • 2 tablespoons grated onion (optional)
  • Salt and pepper, to taste

In a small bowl, stir together the sour cream and vinegar until smooth. Add the parsley, dill, garlic powder, onion, if desired, and salt and pepper and stir. Cover and refrigerate for at least 1 hour.

 

Shrimp, veggies, and ranch dip

Shrimp, raw carrots, zucchini, summer squash, carrots, and cucumbers with the ranch dip, and some zucchini & summer squash sautéed in coconut oil.
